Like gingerbread, but not keen on the crunch and solid snap? Well then my gingerbread is perfect for you.
Years ago I was thumbing through my recipe books trying to think of something yummy to make because I was in the mood to do some baking. Nothing really sparked me until I saw a recipe for gingerbread and I remembered my best friend telling me about her perfect gingerbread. It was something she loved as a kid but it wasn’t the hard kind, she said that it had a “bend” and she had only come across it from one source, a bakery near where she had grown up. So that was my personal challenge, try to replicate it for her.
Using a basic recipe, and over time I added things, took things out, changed the measures, cooking times varied but I still couldn’t quite get there. To give my friend her dues she did make the ultimate sacrifice and ate every batch I made, giving me her feedback and suggestions.
I went back to the drawing board and read all I could on the net about other people’s recipes. I even went as far as to try and track down the original bakery. Then like a lot of discoveries I hit on the right thing … by chance!
So now everyone can enjoy my type of gingerbread!
