Most of us know gingerbread either shaped as a man or in the form of a house, particularly at Christmas. This gingerbread tends to be hard, with a definite snap, like a biscuit. For the gingerbread house, this is obviously very necessary to provide strength to the structure.
Inspired by a friendship, our gingerbread is a little softer, with no snap, that will almost melt in the mouth. Still traditional and yet just different enough to know that your are eating something special.
